Devise your own rituals, cleanse and rejuvenate restoring equilibrium in body and mind. The swimming pool, Cleopatra baths and fitness facilities at One are complimentary for all of our guests. If you would like to indulge yourself with a treatment at One Spa or use the Thermal Suite and Hydropool, we recommend that you book prior to arrival at the hotel to avoid disappointment. The Grill Room is an Edinburgh landmark, an award winning fine dining restaurant. Starched white tablecloths, silver, crystal, and fine china help create the atmosphere, while the cuisine, using the finest Scottish ingredients, attracts a loyal following of locals and visitors.

The Terrace's tall windows look out across the piazza and fountains of Festival Square, making it perfect for breakfast or an informal meal with a theatre of 'live' cooking in the restaurant.

The Exchange, our lounge bar, is as popular for afternoon tea as it is for its exhaustive collection of malt whiskies.

At ONE Spa, Ristorante Santini offers authentic Italian cuisine served in a stylish, modern setting and has been awarded the accolade of 2 AA Rosettes. If informal is more your style, try Santini Bis, offering freshly made pastas and pizza in true Italian style.
